Kicking off a week of mostly casseroles (our teenager is back at school part time, so this eases my dinner load a bit). Tater tot topped ground turkey with a semi-veloute sauce (using oatmilk instead of cow milk). No spices at all. Midwesterners like Worcestershire sauce!  03/29/21

North Dakota

I forgot to take a photo of this truly awful soup. The recipe I found for knoephla was bland and featured potatoes and weird tough dumpling like noodles.  03/16/21

Arrozo con pollo. Maybe I don't have the rice cooking gene because this was very frustrating. I should have dumped the whole thing (sans chicken) in the instant pot. I hate crunchy rice! But I cooked it forever and just couldn't get it done.  03/19/21

Angola

Shrimp tossed with a puree of scallions, garlic, and cumin. Grilled. Simple and easy and delicious. 03/18/21

Pabellon crillo, the national dish of Venezuela. Not a fan (mostly because I really dislike bell peppers and they were prominent).  03/15/21

Chicken rendang I messed this one up and it was still incredible. Oh, the sauce! Will definitely add to the world Hall of Fame. 03/11/21

Kansas

Bierocks. Dough stuffed with ground beef, cabbage, and cheese. In the tradition of pasties and stuffed dumplings. Nearly identical to Estonian pirozhki. 03/10/21

Switzerland

 Fondue! Not particularly tasty (I bought the wrong cheese), but still fun.  03/09/21

Mississippi

Tamale pie. Surprised to learn that tamales are a big deal in Mississippi. This casserole was an easier way to capture the flavor of tamales without all the work (and I might be saving them for another state).  03/08/21

Rhode Island

I hadn't realized calamari was a big thing in Rhode Island until the DNC, when the Ocean State segment showed a guy standing on a beach with a plate of the stuff. Even better, the package of calamari I bought came from Rhode Island! I made this for lunch and it was incredible. Bright and garlicky. Will do again! 03/06/21

Arkansas

Peck salad: romaine, chopped chicken, toasted almonds, and a tarragon vinaigrette. Bacon on the side. Meh. 03/04/21

Slovenia

A yeasted poppy seed roll. To avoid home grinding poppy seeds I bought a can of poppy seed paste and it was awful -- full of corn syrup and tasting of nothing. I added vanilla and lemon zest but it still was not good. Also the roll ruptured (which I read is a common thing) and I panicked and took it out too early. Kid still ate it! 03/04/21 

Java, Indonesia

Teenager proclaimed Indonesia to be too large for just one dinner. Turns out that's ok because Indonesian food is delicious. From Java, I made tempeh dusted in spices and fried. I hadn't made a sauce but a little hot sauce mixed into mayo was a good accompaniment.  03/03/21

West Virginia

Pepperoni rolls. Pizza dough, pepperoni, and mozzarella, rolled into logs and baked. No spices, no marinara. We ate them hot for dinner and I had a tough time finishing mine. There were leftovers and I ate one old for lunch and wow, that's how to eat them! They would make a good picnic food because they are not juicy. I'd take a sausage roll over them any day, however. 03/02/21

Diri kole ak pwa, the national dish of Haiti! So good! Think of New Orleans rice and beans, but with creole spices (all green: basil, scallion, thyme, parsley, and green bell pepper).  03/01/21

Brazil

Chicken nuggets, South America style. Marinated in lime, tossed in cornmeal and flour and shallow fried. I could have eaten the entire batch. 02/24/21

Uttica, New York

Chicken riggis. Forgot to take a photo! Chicken, tomato sauce, and cream over rigatoni. I heavily edited the recipes as there was no way I was going to eat a brick of cream cheese. 02/23/21

We are struggling to find decent, non-dessert recipes from the American heartland. I doubt sloppy joes are indigenous to Missouri, but I couldn't find much else.   02/21/21
