Bahamas

Chicken and red pepper cooked in a vinegar and orange juice sauce. Edible, but not great. (forgot to take a photo) 11/16/21

Cayman Islands

Heavy cake (forgot to photograph). First time using cassava. The cake has warm spices and is a bit like a dense carrot cake, but with yuca. Got better over time.

Malta and Liechtenstein

Beef olives. The gravy was divine. I could have done without the bacon in the filling. Served with kasknopfle, a spaetzle from Liechtenstein. 10/28/21

Korea

I made a bibimbap-inspired rice bowl, with gochujang coated chicken, mushrooms, kimchi, and spinach. It was not exactly traditional, but very very good.  10/27/21

Oaxaca, Mexico

The mole which covered the enchiladas was terrible (to me -- the other 2 liked it). Very strong clove flavor which I found super bitter. 10/26/21
