Luxembourg

Or as we call it, deLuxembourg. This is one fancy country, and the meal of poached chicken in a creamy sauce with a puff pastry topper was fine but bland.  08/30/21

Rwanda

Gabon

Oven baked bananas. The origin of bananas foster? Needed a sauce for sure (recipe suggested topping with sour cream). 08/26/21

Oregon, USA and Eswatini

Two salads. From Oregon, a harvest salad with pears, Oregon blue cheese, and hazelnuts. Eswatini brought us slaai: an avocado salad dressed with ginger, lemon juice, and crushed peanuts. Both were great.  08/26/21

Guatemala

Took a break from Africa with this easy (because I cheated) Central American meal of jocon. The market was out of tomatillos, so I used a packet of Frontera green enchilada sauce. Meal was wonderful -- full of zesty flavor. 08/25/21

Cape Verde

Jagacida: Portuguese rice. Like an easy jambalaya. This nation is interesting -- a chain of volcanic islands colonized by Portugal and independent only since 1975. 08/24/21

Zimbabwe

Curried chicken with grits. This was very easy and good. 08/23/21

Libya

I lost the recipe for this one, but best as I can remember it was hasaada, a lentil stew with toast. Photo is terrible, but it tasted pretty good.  08/22/21

Malawi

Bunny chow! A popular south African dish that is basically a chicken curry in a bread bowl. We liked it. 08/18/21

Republic of Congo

 Kanda, a meatball with ground pumpkin seeds as a binder -- good for those avoiding gluten.  08/18/21

Central African Republic

The Gambia

Dibi, a street snack. Chicken chunks grilled, then served on a baguette with a thick onion and mustard sauce. I added some preserved lemon to the sauce and realized I pretty much made chicken yassa on a roll (not a bad thing). This was very tasty and easy. 08/17/21 

Nigeria

Puff puff! Donuts rolled in sugar, nutmeg, allspice, and clove. A very happy breakfast! 08/17/21 

Burundi

This meal of red beans and plantains was simply awful. I added more and more spice but there was no redeeming it. Dishes like this one, from a very poor and undemocratic country in Africa very much make me appreciate what we are able to choose to eat. Sobering. 08/16/21

Palau

These shrimp and squash fritters, seasoned with Creole spice mix, was outstanding. Really appreciated the spice. Palau is a island chain nation east of the Philippines.  08/10/21

Democratic Republic of Congo and Equatorial Guinea

From Equatorial Guinea, succotash, which was fine. DRC main course was liboke ya malangwa, a spiced fish cooked in banana leaves. Loved cooking in banana leaves, but this recipe was terrible. Way too much nutmeg.  08/08/21 

Vanuatu

Vanuatu is known as one of the "Survivor" locations. It's an island chain east of Australia. I made Lap lap, which is kind of a South Pacific jambalaya. I struggle with the food from this part of the world. Lots of coconut milk, sweet potatoes, and ginger, but not enough acid nor herbs.  08/09/21

Zambia and Namibia

Two recipes from countries colonized by Germans, with Dutch influences too. Mealie bread is made with fresh corn and I am not sure I will ever bake it any other way. Delcious! Potjiekos was pretty bland -- a standard beef stew.  08/02/21

Cameroon

Happy to be moving southeast, away from the peanut coast of Africa. Kati kati is unusual -- chicken is initially grilled, then finished on the stove top in a fresh tomato broth. A little bland, but good, especially with garlic toast.  07/28/21
