Democratic Republic of Congo and Equatorial Guinea

From Equatorial Guinea, succotash, which was fine. DRC main course was liboke ya malangwa, a spiced fish cooked in banana leaves. Loved cooking in banana leaves, but this recipe was terrible. Way too much nutmeg.
