Monaco

Barbajuans are Monaco's national dish. They are fried raviolis, stuffed with seasonal fillings. I chose the summer ones, and stuffed them with greens and a little ricotta. I even made the pasta. They did not stay together well when fried, but were delicious. 02/16/22

Martinque

I'm having a rough time finding suitable recipes for the many Caribbean islands. Many call for fish I can't find, or pork or goat (which aren't in our acceptable ingredient pool). For this dinner I made a sauce au chien, a very green salsa served as a condiment for lobster tails.  02/22/22

American Samoa

I can't find the recipe I used, but this was a vaguely Asian stir fry with noodles, really a chop suey. Not a lot of spice, but still pretty good. 01/27/22

Singapore

I adapted a recipe from Padma Lakshmi's latest cookbook, substituting chicken for shrimp. This was a very tasty noodle curry-ish dish and we liked it a lot. 02/12/22

Northern Mariana Islands

 Rosketti. This was hands down one of the worst recipes I've ever made. Maybe it was a bad recipe. These are shortbread-ish cookies with way too much cornstarch.  02/12/22
