Trinidad and Tobago

Doubles, curried chickpeas and spicy flatbread. The flatbread, yeasted and seasoned with cumin, turmeric, nutmeg, and allspice, was out of this world.  09/15/21

Lithuania

A rare complete failure! I even watched a video about how to make cepelinai, but these stuffed dumplings fell apart in the poaching liquid. I was smart enough to try one as a test, and since it didn't work I repurposed the filling (ground turkey) into little patties, fried the remaining shredded potato and bacon and served it with some sour cream.  Lithuania is a fascinating country. They produce some of the tallest and best basketball players in the world. It was the last pagan country in Europe (!). Lithuanian is one of the oldest languages in the world. Who knew? 09/03/21  

Guadeloupe

This island is a French department (technically part of France) and this recipe for bokit au poulet had a ton of different spices (including a new-to-me spice mix: colombo). In the end, kind of weird, but hey, it's just dinner. 09/01/21  

South Africa

Pushing to get through Africa and for simplicity sake made these pears poached in rooibos tea. I should probably come back with a proper first course in the future. 08/31/21

Oman

South Carolina and Georgia

Cornbread and collards (South Carolina) and fried chicken (Georgia). I can't remember ever making fried chicken and it was tricky (couldn't tell when it was done, even with a thermometer -- went with my gut and it was perfect). Leftover cold fried chicken was even better than hot! 09/17/21
