We spent several hours on our version of the Moroccan classic b'stillas. Filo dough layers wrapped around chicken spiced with ground almonds, cinnamon, ground ginger, and saffron. Sweet and savory, completely one of a kind and out of this world! 1/17/21
A yeasted cake flavored with mastic and mahleb Disaster. Tasted like a tree and the texture was gummy. Loved the mahleb as it went into the dough, but couldn't really taste it. And the mastic, which I stupidly ground in my blender, is now permanently stuck to the bowl. January 2021
Hand pies filled with chicken, apple, onion, and currant. Dry but somewhat addictive. This is the first time I tried vegan pastry and it didn't work great. 1/3/21
We heavily cheated on this one. Andorra is a country that eats a lot of meat and cheese (and presumably dusts all their food with gold). I modified a rabbit dish with chicken. It was pretty dang dull, but, hey, it was dinner. 1/7/21
Kaukau: roasted sweet potato mixed with ginger, coconut milk, shallot, garlic, cinnamon, and orange juice. Strange! We wanted it to be either sweet or savory, rather than in between. 12/29/20
