Algeria

Quite possibly the most interesting Eat the World to date. Algeria has been invaded and influenced by many countries. They eat a lot of meat (mostly mutton) but couscous is their big dish. Tonight's side dish was carrots roasted with cumin, paprika, cinnamon, and lemon juice. Mahjouba was the star -- pureed onion, carrot, sweet peppers, and tomato are cooked into a jam, cilantro is added, and then the mixture is smeared onto a semolina (unleavened) dough. The dough is folded and then fried. Kind of a pizza poptart! 9/17/20
